Escort cards have the guest names and table numbers written on them. They usually receive this at the registration table. You can have an escort card for each individual guest.
Place cards only have the guest names. Place cards are used to indicate exactly where at the table a guest should set. These are traditionally placed at each table so the guest will know exactly where they're seated.
Depending on the size of your wedding, you can include first and last names or just first names. For big celebrations, these cards may also appear only for special guests, e.g. the Presidential Table.
